- 1 cup cauliflower rice (available from supermarkets)
- 100 grams poached chicken breast
- Edamame beans
- 1/4 avocado
- Bean sprouts
- Spring onion
- Sesame seeds
- Lime juice
- 1 tablespoon soy sauce
Cook rice according to instructions found on the pack.
Prepare ingredients by cutting the poached chicken breast into small pieces and chopping the cucumber, spring onion and coriander, slicing the avocado and grating the carrot.
Combine the lime juice and soy sauce in a separate container.
To assemble the bowl, lay the rice on the bottom of the bowl and cover with the chicken and all other components. Drizzle the soy and lime dressing over the top and enjoy.
